"Ham"min it up!!
I love having a nice meal on Sundays. I usually plan something that I can put in my crock pot for a good part of the day. The house smells so good. When dinner time comes around it is ready to eat. I love cooking ham. It makes for a wonderful dinner and then makes great leftovers for other meals the rest of the week. This week you will see what I do with the left over ham. Unfortunately my potatoes went bad that I had in my cupboard so I pulled out some of my potato pearls from our food storage, cooked some corn on the cob and opened a can of olives. Such a wonderful meal with not too much work.
Chicago Style Hotdogs
My husband taught me this recipe. I am not sure if he ate a chicago dog at a restaurant somewhere or if he tried it while he was in Chicago for business a few years back. All I know is that my family really enjoys them. My 3 year old can't quite fit her little mouth over the whole thing yet but she loves eatting everything out of the bun. Add some chips, fruit and veggie for a quick and yummy meal.Needed Ingredients:
- Hotdog (Turkey or Beef)
- Hot dog bun
- Tomatoes
- Onion
- Cheddar Cheese (grated)
Easy Chicken Cordon Bleu Casserole
This is an awesome meal that is a hit at my house and I love it because it is very easy and quick to make. Great for those nights you don't want to cook all night but don't feel like going out either.
Lay the different ingredents in a 9x13 dish in this order...
Second... lay 6-8 slices of ham over the chicken
Third... cover with 8 slices swiss cheese
Fourth... pour 2 cans cream of mushroom soup mixed with 1/2 milk on top.
Fifth... 1 bag of croutons, mashed and sprinkled on top.
Cook uncovered at 350 for 1 hour
Easy Cheesy, Fresh and Squeezy!
Chicken avacodo sandwich
Wow this is a good one. My sister in law Melanie made this for me at a Sister's Reunion this past July. They were so good. After I finished mine I was wishing I hadn't.
Sourdough bread. Butter one side and sprinkle fresh parmasan cheese. Put the buttered and cheese side down on the grill or pan. On that slice of cooking bread lay a slice of mozzarella cheese, turkey, and avocado. Top it off with buttered sourdough bread and cheese on top.

Honey-whole wheat bread (Low fat)
This is one of my favorite recipes. I use it for everything my pizza dough, hell burger buns, bread and rolls. It is the best.Prep: 35 minRise: 1 hour. 5o minBake: 45 minmakes: 2 loaves (16 slices each)3 c. Whole wheat flour1/3 c. honey1/4 c. shortening or butter1 T. Salt2 Pkgs. yeast (2 T)2 1/4 c. very warm water (Think hot tub)3 to 4 c. whole wheat flour (remember add slowly until dough comes off sides of mixer or becomes the right consistancy. Sticky but workable.Combine in microwave safe bowl. Honey, shortening, salt, warm water (I cook for 1 minute at a time. Remember you want to think hot tub). Not too hot and not luke warm. If it is too hot I place a metle spoon in the bowl and that helps it to cool faster.Combine heated ingredients with 2 c. of flour and yeast. Mix for 3 seconds and look to see if the yeast is alive (bubbling). If it is continue adding flour slowly until right consistancy.Oven: 375Bake: 40-45 (if making loaves of bread) After your bread is done cooking pull out of your bread pans onto a cooking rack or towell and rub butter on top to make the crust really yummy.12-15 min (if rolls)

Sticky Buns
My husband makes fun of these pictures. I'm not even going to tell you what he calls them. All I need to say in my defense is that this was my first attempt at making sticky buns and that he couldn't stop eating the finished product. Hopefully the next time I attempt making this for my family my presentation will be more appetizing. You can make any bread recipe or even buy the Rhodes frozen dough in the freezer section of your favorite grocery store for this recipe. This is so yummy.
1 c. sugar
2 tsp. cinnamon
Step One
Dip dough in melted butter
Step Two
Dip buttery dough in cinnamon & sugar
Step Three (Drizzle over top)
melt 2 tsp. butter
2 tsp corn syrup
Place in a bunt pan or whatever you have. You can't mess this up.
Oven Temp: 350
Cooking Time: 20 to 30 min
My secret to making yummy bread
Wednesday night I taught a group of teenage girls from our church how to make bread. It was so much fun. After this experience I realized that not very many people know how to make bread. That really surprised me. When I was a teenager my mom was on a mission to teach me how to be a good cook. Unfortunately I kept on telling her that cooking was not my thing (with a flick of my hair). My mom would get so mad at me and I would laugh because I didn't think it was that big of a deal. Well, after I got married I really wanted to make a good home cooked meal for my husband. I hurried home from work and started making rolls. I cooked and cooked for a few hours. Somethings turned out and some did not. The most disappointing this about that meal was that our house smelled like homemade rolls but the smell was all we got. They were all in the garbage because I didn't know all of the steps to making bread. The rolls were a flop. What a teaser! I too, like my mom, am on a mission to teach my children how to be good cooks. I eventually learned the art of making really yummy bread but only with many calls home for advise. It would have been easier if I had let my mom teach me while I was at home but sometimes we have to learn things the hard way to appreciate them. My mom could have said I told you so but she lovingly guided me. If you would like to learn, the following steps are the guidelines my mom taught me.
First, you need to make sure that the temperature of the wet ingredients are hot but not too hot. The temperature is similar to how hot a hot tube gets. I know that that is a funny thing to compare it to but it helps me. You can tell that the yeast is good (alive) and that the temp of the water is correct when you combine them and the yeast starts to bubble.
Second, adding flour. One of my favorite bread recipes calls for 6 cups of flour. I add it slowly until the dough is the right consistency. The dough should be sticky but not sticky enough that the batter comes off on your fingers when you touch it. This sometimes means that you don't add all of the flour it calls for. When I am making bread I don't use measuring cups. I just dump until the dough is to that perfect consistency.
Third, After you have all of your ingredients together don't forget to knead the bread for a good 5 to 10 minutes. Then stick the dough in a bowl next to the warm oven and cover with a clean damp cloth. The heat from the oven will help the bread to rise and the damp cloth will keep it from drying out.
Fourth, Let your bread rise for 45 minutes to 1 hour. The longer you let it rise the lighter your bread will be.
Once you master bread you can make so many different things. You can make cinnamon rolls, bread sticks, Pizza, dinner rolls, pigs in a blanket, orange rolls, scones, etc. Bread is one of my favorite things to make.

Chicken Foil Dinner
It always makes me nervous to make meals for friends or family. Especially if I get brave and try something new. I had company coming over for dinner and needed something really yummy to make. My mom told me about this recipe that she called Chicken Foil Dinner. I felt ambitious and decided to give it a try. It is really quite easy to make. Once it was on the table ready to be eaten, I started feeling nervous. I questioned my resolve, serving something new but it was too late to change it so I had to just go with it. I prayed that it would be edible and hoped it would be much more. Our new friends loved it so much they called later asking for the recipe. Yea, what a relief. I was so glad it turned out so well!!
Ingredients
6 chicken breasts thawed
1 medium onion (Dice)
2 medium tomatoes (Chopped)
1/3 cup fresh parmesan cheese (Grated)
3 zucchini (Sliced)
Rub
1/4 t black pepper
1 T flour
1 T water
1/2 t basil
1/2 t Lawry's season salt
Lay out 6 pieces of foil
Mix Rub ingredients together and apply to chicken breasts. Lay each individually on the foil pieces. Then take the other ingredients and top the chicken with them. Onion, tomato, parmesan cheese and zucchini.
Oven - Wrap up the foil and bake at 450° for 40-50 minutes (chicken side down)
Barbecue - Preheat to medium. Double the foil. Cook for 20-23 minutes (chicken side down)
I have used both the oven and barbecue approach and both have turned out great. Let me know what you think.
Grilled Cheese Sandwich
This meal brings back memories of the first time I cooked for my husband (boyfriend at the time). Ryan and I had only known each other for a short time. He always cooked for me (omelets, egg burritos, lots of macaroni concoctions and corn). I was always grateful. Getting use to not having my mom there to cook for me was a hard and I was always hungry. I felt it was time that I made something for him so one day I told him to come to my apartment for lunch. After hanging up the phone I looked in my cupboards and saw that my options were very limited. We could have cereal, peanut butter and jelly or grilled cheese sandwiches. I pulled out the butter, cheese and bread and tried to hurry and make these very simple sandwiches. The feeling of needing to hurry was the first mistake. I cooked the sandwiches too high (Tip: cook it low and slow). I got busy trying to pull together other side items and then realized that I needed to flip them over. It was too late, they were burned to a crisp. I only had a couple slices of bread left so I decided to be smart and just pull off the burnt sides and start over again. What a great idea until I burned them again!! Now I was out of bread and he was at my door ready to eat. I scraped off as much of the burned areas as possible and had no other option but to serve them. Ryan laughed and said that it was ok, he was so hungry that anything would taste good. I took one bite of mine and could not eat anymore (and let me tell you I was hungry). He on the other hand ate his and mine. Now that is TRUE LOVE!If you haven’t made grilled cheese sandwiches before (where have you been?) all you need is bread, cheese, and butter. Spread the butter on one side of the bread. Lay the buttered side down on the grill or pan. Lay thinly sliced pieces of cheese on bread and second slice of bread on top (buttered side up). Let it cook on medium/low until golden brown and then turn. So easy and really yummy when not burned!!
Momma Miller spegettii sauce - The BEST!!
This is the BEST spagetti recipe ever. My mom found it from a Better Homes and Gardens magazine after she was married in 1974. It has been a favorite ever since. She adds new things to it every time. If there is something you think will make this recipe better add it. That is one of the fun things about cooking, you can make it the way you like it.
Serves 4
1 lb Ground beef, Turkey, Byson or Italian sausage (cook meat before adding to sauce)
1/2 Clove of garlic crushed
1 T Dried parsley
1/2 t. Salt
1/2 t. Dried Oregano
1/4 t Dried basil
1/2 t Sugar
Small can tomatoe paste
15 ounce can tomatoe sauce (with green pepper, onion, tomatoes bits in it)
Mushrooms (optional)
Let sauce come to a boil and then simmer for 15 minutes.
Omelet"liciou"
Mix 3 to 4 eggs together in a bowl and dump in pan. Cook until almost done.
Cut up your favorite veggies, cheese and meat (ham, turkey or sausage).
Put ingredients on one side of cooked egg.
Chicken Kabobs
I like this seasoning. My mom found this "Herbes de Provence" at TJ max. It has become one of our fav's. You could use any seasoning for this. Lawry's is also a good one to use.
Add your veggies and meat (chicken or steak) to the kabob sticks. Cook them on the barbeque until the meat is done.
Homemade Macaroni and Cheese
When I was a teenager I loved hanging out with my friends (Kami and Jennie). One day we were at their house for lunch. We were all hungry and decided to make something to eat. They asked if I like mac 'n cheese. I said absolutely. All seemed normal when they boiled water but I got confused when they pulled out some regular noodles and two different blocks of cheese (cheddar and Mozzarella). I watched them add the cut up cheese to the pot of cooked noodles. What a interesting way to make macaroni and cheese. After tasting it I fell in love with the recipe. Mac n' cheese made this way is more filling and real (not processed). So when you ask my kids if they want mac 'n cheese this what they expect to see, and they love it. Another quick and easy meal.Needed ingredients:
- Noodles (we use whole wheat noodles)
- Your favorite cheese. Our favorites Mozzarella and Cheddar
- I sometimes put chicken/ham/or turkey with it. So yummy!
Cooking in the mountains
My family and I love to camp, fish and hike. We try to go as much as we can during the summer. As our family has grown the job of organizing such an event can be overwhelming. After my list is made of everything that we must fit inside my "swagger wagon" I start to gather it all together. On this trip we decided to keep the food as simple as possible. It made the trip more enjoyable for me. Sometimes it seems that I am always cooking and not enjoying the great outdoors or the family. This was our food plan for this trip.
Thursday:Dinner: Frozen Pizza (wrapped in tin foil) cooked over the fire. Quick and easy!Set up Camp!!Friday...Breakfast: Homemade granola/cereal with fruit and pop tarts (Ryan's family always had pop tarts while camping. Keeping the tradition alive).Lunch: Cream cheese and ham on bagels. Chips. Apple. Chocolate pudding cups.Dinner: Cans of favorite soup/chilli cooked over fire. French bread.Dessert: Roasted MarshmellowsSaturday:Breakfast: Cereal with fruitPack up camp :(Lunch: Peanut Butter and Honey sandwiches. Chips. peaches.Lots of snack food is also part of the deal of course treats make it more fun. We love trail mixes, beef jerky, licorish, nuts, fruit snacks, etc.
