Whole Wheat Waffles

1 3/4 cups flour (white or wheat)
1 T baking powder
1/4 t salt
2 eggs
1 3/4 c. milk
1/2 c. cooking oil

Put everything into a bowl. Mix it well. Use a cup and pour in your waffle machine. Don't put too much batter in or it will come out of the sides and make a big mess on your machine. (I know this from personal experience!) I always loved it when my mom made waffles. We use to put homemade aprocot/peach jam and whip cream on top. Oh so good. My mother in law like to put peaches that she froze and vanilla ice cream on top. It is like dessert for breakfast, lunch or dinner.

Omelet"liciou"

Mix 3 to 4 eggs together in a bowl and dump in pan. Cook until almost done.
Cut up your favorite veggies, cheese and meat (ham, turkey or sausage).
Put ingredients on one side of cooked egg.
Fold egg over the ingredients and let cook for another minute on both sides
We love to put sour cream and salsa on top. I make this all of the time. It is so easy to make and really feeling.

Pancakes and Scrambled Eggs



Everytime I make pancakes it makes me think of this one really hard day. My husband (Ryan) and I were really stressed out and as we sat there at the dinner table we saw it in our kids faces as well. I made lots of pancakes that night and after we finished eatting Ryan and I began throwing the extras at each other and our children. Before we knew it there were pancakes all over our kitchen and smiles on everyones faces. Laughter is such great medicine. This is the pancake recipe I follow everytime.

1 c. Whole wheat flour
1 T. Sugar
2 t. Baking powder
1/4 t. salt
1 beaten egg
1 c. milk
2 T. cooking oil

Makes 8 to 10 4-inch pancakes.

Scrambled Eggs

I am sure everyone knows how to scramble eggs. I have my 9 year old son cook ours all of the time. He says he cooks them restaurant style and loves to help in the kitchen. I just know from personal experience that I was not very good at making scrambles eggs until my husband taught me his technique. This is what he taught me. Add milk to the eggs after you beat them and place in the skillet. We believe the milk helps the eggs to be lighter and fluffier. Cook at a medium temperature. I always cooked at a higher temperature because I was in a hurry this made for harder eggs. Salt and pepper to taste and enjoy.
