Canned Peaches - mmmm!

These are so easy. Clean peaches. place in boiling water for 5 seconds and pull skin off. Take pit out and cut into slices or halves. Fill your jars (wash jars in really hot water or in your dishwasher before you fill) up. Fill water all the way to the top. Put lids on (Boil lids in a pan of water for 3 minutes). Put your bottles in a Water Bath Canner (a huge pot with a lifting rack to sanitize the jars of peaches after filling (about $30 to $35 at mall kitchen stores and local "big box" stores, but it's usually cheaper online from our affiliates) You CAN use a large pot instead, but the canners are deeper, and have a rack top make lifting the jars out easier. If you plan on canning every year, they're worth the investment

Grocery List #4

Sloppy Joes

This recipe is sooo good! Way better than anything you can get out of a can from the grocery store. A really quick and easy meal.

Saute Together
2 lbs beef (browned and drained if any fat)
Onion (diced)
Green Peppers (diced)

Mix together with Sauted
1 can Chicken gumbo soup
2 can Tomato paste (add one at a time/eye ball it)
Spice it up with chilli powder, Salt and Pepper.

Homemade Pizza

My mom made homemade pizza all the time while I was a kid. We called it "Momma Miller Pizza". It was popular among our relatives and friends. Now it is something I enjoy making for my little family. Customize your pizza thin/thick crust. Use your favorite bread dough. This is my favorite. Add Spagettii sauce, cheese (my mom likes cheddar. Mozarella is our favorite. Both are great!) Toppings...pepperoni, pineapple and ham (my favorite), meat lovers, veggie style, chicken barbeque, and yes even anchovies (not a family favorite). It is so easy to make. I even have my children help. Hopefully this will become one of your favorites as well.

Chili and cheese potato

This recipe is so easy to put together. All you need is potatotes, cans of chili, cheese, and sour cream. I usually have a favorite veggie or salad to go with it.

Chicken Fajitas

2 c. flour (if you want wheat add 1 c. of wheat for white) I used two cups and the tortillas were to hard to work with.
1/2 t. baking powder
1 t. salt
2 t. veg. oil/ butter
3/4 c. milk (warm) - slowly add

Kneed for 3 minutes. Then let sit in a bowl for 5 minutes with a damp towel coving it to keep the dough moist. Make into your balls and begin to flatten. Ryan (my husband) rolled over the dough as seen below and then would pick up the dough and turn it 45 degrees and roll over it again. This process helps the tortilla to be round. Bake in your pan until it starts to bubble then turn over until more bubbling and turn over one more time.

Cook chicken and add spices (we love Lawrys) after chicken is cooked add your favorite bell peppers.

3 Avacodos
1/2 Onion
1 Tomatoes
1 Bell pepper
Salt to taste
Stir together for the best guacamoli.

Deep Fried Zucchini

A friend that works with my husband (JC) stayed with us while they were working in our area. He couldn't help noticing all of the zucchini I had on my counter. He asked if we had ever tried fried zucchini. We hadn't so he decided to make them for us. They were a hit in our home. My kids gobbled them down. I loved learning another way to use these zucchinis.
Bowl with wheat flour, and seasonings to taste. Lawrys, Salt, Pepper, Oregano, basil.

Coconut or Olive oil for cooking in.
Cook until browned. Let cool for a couple minutes and serve.
